What's with the name, Potlikker, Anyway?
"Potlikker" is an old Southern term for the
juice left over in a pot after boiling greens. It's
also spelled with a "qu" instead of the two k's, and
when spelled with a "ck" can mean a dog that likes to
lick pots clean.
In the 1930s, La. Gov./Senator Huey Long used recipes
about "potlikker" as a way to introduce himself to the nation at large.
